Copenhagen Update: Vegan Sandwich

By E. Calvin Beisner, Ph.D.

Would you like a vegan sandwich?

Well, to tell you the truth, when the Asian girl with the sweet smile on her face first offered me one from her large tray in the cold outside the Bella Center, where UN climate talks continued this afternoon, I was suspicious. Might it be poisoned? I turned it down.

But I was hungry—really hungry. It’d been about sixteen hours since my last meal. And they were offering a free vegan recipe book along with the sandwich. Others were taking and eating the sandwiches, and I didn’t see anyone keeling over.

She came by again. “Would you like a vegan sandwich? It’s really delicious!”

I gave in.

And it was. It was really delicious.

And the experience reminded me of something. Although there are some really evil people in the environmentalist movement, especially among radical environmentalists and those who want to take drastic actions to reduce human population, there are also lots of perfectly nice people involved. Generous, kind, altruistic.

What’s so sad is that so many of them are so misled. They have good motives but reach bad conclusions because of poor information and poor thinking.

So I’ll take the vegan cookbook home to my wife, who’s a great cook and loves good cookbooks, and we’ll probably experiment with some vegan recipes.

AFTER I have a big, fat, juicy steak upon my return from Copenhagen!
